Spice and marinate your bone-in chicken breast with salt, pepper, and oil. Roast in the oven at 425 degrees for 20 minutes. In the same baking pan, place evenly chopped brussel sprouts on top of the chicken. Add melted butter and garlic over both the chicken and brussel sprouts and continue to roast in the oven for another 20 minutes. This meal also goes well with wild rice.
Butternut Squash Soup
Add thinly chopped onions and butter to a large pot and cook on medium heat until the onions begin to sweat. Then add diced butternut squash and vegetable stock into the pot, and cook on medium for some time until the butternut squash becomes soft and you can easily push a fork through it. Once the squash is soft, use a hand blender to create a creamy texture. Add kale and diced ham into the soup and cook until the kale is soft. Add salt and pepper to taste.
Savory Mushroom Pasta
In a large pan, add diced mushrooms of your choice, cherry tomatoes, oil, garlic, salt, pepper, and Italian season and cook on medium heat until mushrooms and tomatoes are soft. Once the vegetables are soft, add spinach and cooked whole wheat pasta and stir together. Add more oil while stirring in the pasta and spinach, and add more garlic, salt, pepper, and Italian seasoning to taste.
